Pinot Grigio:
Fresh, lively, crisp, with hints of green apple and pears. Serve Chilled, it is "Summer in a Bottle".

Chardonnay
Un-oaked or otherwise treated, to modify the natural crisp flavors of the grapes. The wine is clean and shiny and made to taste like the grape.

Viognier:    
Aromatic, floral, big, smooth, unusual, and enjoyable.
Delicate honeysuckle and orange blossom aromas backed by spicy hints of nutmeg and white pepper with sweet citrus and crisp pineapple flavors.

Pinot Noir:  
Delicious, fruity, bigger than you would expect with a long lingering finish. Made from Kuna Butte and Stowe vineyards in order to gain access to old style Pommard and new Dijon clones for a full bodied, aromatic, deep colored, wine filled with juicy berry aromas that play against a nice herbal, earthy quality along with bright cherry and berry fruit flavors.

Enigma:  
The United States recently signed a trade agreement with the European Union restricting the use of placenames to identify wines. Even though our wine is combined with brandy made from grapes we cannot say that it is "fortified". Nor can we call it Port, because it is not from the small seaport town of Oporto in Portugal.

If categorized, it must be labeled as "Dessert Wine". 

But, Enigma is NOT sweet. The level of alcohol is higher than a red table wine because Brandy distilled from Cabernet grapes has been added. Enigma is smooth and silky in the mouth, not hot. But, no matter what you call it, we still make it in the traditional style we have used for years. 

So what do you call it? Even the question is a puzzle. 

Enigma:  Toriga Nacional, Souzo, Syrah and Malbec, aged till caramelized and thick with richness. Delicious with Dark chocolate.

Time is critical at all steps of the winemaking process. The best wines are grown in the best vineyards. They are picked by hand when the flavors are at their peak. Primary fermentation is initiated only after the skins become soft and ready to share their personality.  Slow, temperature controlled extraction of pigments, flavors, tannins, and unique qualities takes weeks, sometime months to complete. 

We take a hands-off approach to aging our wines. Racking is done minimally to ensure a full bodied and rich mouth feel. Aging is done in neutral barrels, not new, to let the wine show through rather than change the characteristics of the grape with smoke, vanilla, and oak.

Merlot:     This much maligned wine is delicious, soft, subtle, and smooth. 

Malbec:    One of the lost red grapes of Bordeaux.  Inky dark but loaded with fruit.

Cabernet Sauvignon:    A standout big red wine. 

Les Bois: Our signature blend of Cabernet Sauvignon, Malbec, Merlot and Petite Verdot. Each release is the optimum combination of the best of each individual wine. It is aged longer than the single varietal wines in barrels and held in the bottle long enough to allow the flavors to meld together. 

Fiorentino:  Sangiovese with Cabernet Sauvignon and Malbec. The best of both worlds. Old style European heritage from Italy and France with the body and strength of the great northwest.

Caberlot:    A blend of Cabernet Sauvignon and Merlot. Each year we bring together a tasting panel of friends to put together the best combination of body and rich smoothness.  The ratio will change from year to year, but will always the best the vineyard can grow.

OMG: Malbec and Cabernet Sauvignon, two of the richest, darkest, thickest red wines grown, combined together and crafted with just enough oak, tannins, acidity and fruit to have you repeating over and over to yourself, Oh My Goodness. And, enjoying the lingering flavors long after your glass is empty.
